Healthy(ish) No-Bake Cookies

Healthy no-bake cookies! Well, healthy enough anyway. Why? Because my diet (which will be explained in a different post) restricts me from eating almost anything that isn’t healthy. Don’t worry, they don’t taste “weird”. 😉 In fact, they taste quite good if I do say so myself.

What you’ll need for this recipe:
1/2 cup butter or margarine
1/2 cup milk of choice
2 cups coconut sugar or sugar substitute (normal white sugar also works)
1/2 cup cocoa powder
3 cups oats
1/2 cup shredded coconut
1 teaspoon vanilla extract
dash of salt

Combine butter, milk, sugar, and cocoa powder on medium high heat until it boils. Once it’s boiling, stir constantly for 1 minute then turn off the burner.

Once you’ve turned off the burner, immediately add the rest of the ingredients and mix well.

After that, use an ice cream scoop to line the cookies on wax paper. Let them set in the fridge for an hour or two, then they’re ready to eat!

Ingredients:

Directions:
In a medium saucepan bring butter, milk, sugar, and cocoa powder to a boil. Remove from heat, then immediately add the rest of the ingredients to the saucepan and mix well. Use an ice cream scoop to line the cookies on wax paper, then let them set in the fridge for an hour or two. After they’re set, you can either eat them or store them covered in the fridge.
